Climate: 
Warms days and cool nights produce a significant difference between daytime and nighttime temperatures.
Soil: 
Our Syrah vines are planted on stratified and gently rolling hillsides that are alluvial in origin with moderate depth, good permeability, and low fertility. The Nebbiolo grows on sandy clay soil on the plain.
Harvest date: 
March—April 2007.
Winemaking: 
The grapes were destemmed and lightly crushed prior to a 3-day pre-fermentation cold soak in stainless steel tanks at 59°F (15°C).
Wine Description
Appearance: 
Intense violet-ruby-red in color.
Aromas: 
Potent and elegant, with a predominance of red fruits such as cherries, as well as yellow plums and herbs and spices such as cilantro, fennel, and cardamom accompanied by notes of oak and toast.
Palate: 
Straightforward attack with a mid-palate that is nicely sustained by a combination of acidity and tannins that provides good structure and balances the wine’s tremendous volume. The finish is long and persistent with toasted flavors.
Serving suggestions: 
Accompany this wine with hearty beef and vegetable or oxtail stews. It also goes very well with roasted duck breast and other dishes with intense flavors. Serve at 64ºF (18°C).
